The “Sobao Pasiego” is a typical sweet from Northern Spain with a resemblance to sponge cake made with flour, butter, sugar and eggs. Its characteristic mold is a white paper called “gorro”.

It can be eaten for breakfast with a cup of milk, hot chocolate, coffee or tea. It can also be consumed as an appetizer at any time of the day.

Joselin Sobaos Pasiegos y Quesadas S.L. is a family business located in Selaya, in the heart of the Pasiego Valleys (the area and valleys around the Pas river valley) of Cantabria.

Beginning in the early 1950’s in a traditional bakery in the town of Vega de Pas, for over sixty years Joselín has been creating an extraordinary product which combines traditional craftsmanship of the Pasiego valleys and the highest quality.

In 2017, Joselín Sobaos Pasiegos y Quesadas has been awarded with two GREAT TASTE AWARDS that certifies the quality of their Quesada Pasiega and Sobao Pasiego IGP.
